The Bargiolina agricultural company, located in the hills of Barge, is engaged in the production and processing of fruits. We utilize our decades of experience and two state-of-the-art laboratories to professionally transform the fruits harvested from our fields. Passion and professionalism are the foundation of our working method. Additionally, Bargiolina offers the exclusive service of fruit processing on behalf of third parties.

Sorting and washing

The first step of the transformation begins with the arrival of the fruits in crates. From these crates, we carefully select the products in excellent condition, discarding all others. After sorting the fruits, we proceed with washing them.

Peeling + Vacuum cooking

After washing, the fruits are peeled, blanched, chopped, blended, and sieved to obtain a puree. The puree is then cooked and vacuum-concentrated at a maximum temperature of 65 degrees Celsius for 1-2 hours. This step allows us to preserve the fresh taste of the fruits while preventing sugar caramelization.

pH and Brix control + addition of ingredients

After cooking and concentration, we proceed to check the pH values for possible acidification with lemon juice and the Brix degree in case sugar needs to be added. When the values are optimal, any additional ingredients can be added to complete the jam (cocoa, amaretti biscuits etc.).

Jar filling, Pasteurization, and Labeling

Once the cooking and addition of ingredients process is completed, we move towards the finalization of the processed product. The jam is filled into the volumetric filler and jars. Then, it undergoes pasteurization and is finally packaged. At the end of the cycle, the product is labeled accordingly.

Within Bargiolina, we have a specialized laboratory for fruit processing on behalf of third parties. We carry out our transformation process using your raw materials, following our recipes and yours. The product, available in different formats, will be exclusive with a personalized label.

  • Clear juice: 700kg
  • Jam: 40kg
  • Juice and pulp: 30kg
